Weekly Feed: Sydney’s famous salted chicken

Ever tried salted chicken? Alison of B-kyu is here to get you ready for it, as it can be a bit of a shock to the system the first time.

While it’s served cold there’s no need to worry. It’s got a lovely, gelatinous texture from the skin and fat, and from letting it cool.

Alison’s favourite is at Minh Hai, which has just moved to Sussex Street in the city. They also serve a delicious, gently braised pork in soy broth, like a ham hock, served with rice, fried egg and pickled mustard, to cut the fattiness of the pork.
