Wine Chat: Savagnin

This week at wine chat we’re taking a look at the ancient grape variety savagnin. Grown at the foothills of the French alps this grape has more than 900 years of history in the region. It also has a surprising modern chapter here in Australia. We are joined by BSC: Wine Science student Cal Lee to lead us into the world of wine making.

2023, DEFIALY ‘Pale Blue Eye’s’ Savagnin, King Valley Victoria
A great example of what modern Australian winemakers are doing with this ancient grape varietal. Aged oxidatively for 12 months, it gives a nutty, dried apple base line for the pristine acidity to be built upon. Not a party wine but appreciates charcuterie or roast white meats. Suitable to drink now, but will improve massively with age.
