Sydney’s New Fish Butchery

Sydney’s first Fish Butchery is now open in Oxford Street, Paddington, and they’re focusing on using sustainable, under-utilised produce. They’ve managed to create some pretty tasty dishes with the parts of fish that would normally go to waste and be thrown in the bin, and species of fish that mainstream restaurants wouldn’t normally go for. Tess chatted to founding chef at Saint Peter and Fish Butchery Joshua Niland about what to expect from the Fish Butchery and the challenges of sourcing his fish.
