With 25% of all food purchased in Australian households going in the bin, food waste is a growing environmental issue. But what can we do to help? One simple solution is to learn the art of food preservation. Things like pickling, jam making and fermentation are all great ways to extend the life of the sad veggies sitting at the bottom of the fridge. Alex Elliot-Howery from Cornersmith Cafe & Picklery is Sydney’s pickling queen. She has published multiple cookbooks and runs a variety of workshops, teaching people the art of food preservation. She spoke with Daily producer Stefan Posthuma to give us all her tips on perfect pickling at home.
