Ingredients Time Forgot: Mock Turtle
Despite its name, Mock Turtle is a mid 18th-century English soup that used brains, organs and limbs of a calf in order to duplicate the flavour and texture of a green turtle. By boiling and stewing a calves head, it created a naturally silky soup texture that ended up on the tables of those in upper and lower classes. A highly practical and wasteless dish, it slowly fell out of fashion post WWII. Today we spoke to Colonial Foodie Jacqui Newling to chat about this popular heart-warming dish.
